This is a quick and easy meal. It can be a bit bland, so you may want to add some herbs to give it a bit of flavour.
Dinner (Week 1 Day 1) - Pasta with Broccoli and Black Beans

Pasta with Broccoli and Black Beans
black beans (150 g wet, drained) *
Fresh Broccoli (200g) - roughly 1 head of broccoli
Pasta, whole wheat (40g)
Olive Oil (12 ml, 2 tbsp)
Garlic (1 clove), sliced thinly
Chilli to taste
Salt and pepper to taste
Parmesan cheese finely grated (5 g, 1 tbsp)
Walnuts (25 g)
Dried Cranberries (20g) or other unsweetened dried fruit
Bring a large pot of water to boil.
Add salt, the black beans, broccoli and pasta.
Cook until the broccoli and pasta are ready.
Fry garlic and chilli in water
Drain and toss with olive oil, water fried garlic and chilli
Add parmesan cheese
Combine walnuts and dried cranberries and eat after dinner
- We use dry black beans and prepare them earlier in the day, but these can be substituted for canned black beans. Keep in mind that you will only use 150g or a 450g can for one serving.
